Having cut his teeth at the renowned Parisian institutions of Le Crillon and Le Prince de Galles, Nicolas has held the position of pastry chef at Hôtel Le Fouquet's in Paris since 2019. He also recently launched his own patisserie, CinqSens, in Paris and the Paris region. In his sweet creations, Nicolas strives to convey his passion and sincerity, highlighting hazelnuts and pistachios with exceptional mastery. His signature pastries include fluffy cakes and eclairs, demonstrating his creative talent and commitment to gustatory excellence.

I really appreciate the way the videos are organize for each recipe. Everything is clearly explained, step by step. The tips given and the recipes that can be downloaded are exactly the same as those in the video. Even at the expert level, the recipe may seem difficult, complicated and time-consuming, but it doesn't seem insurmountable.
