Jean-Marie Lanio is a bakery chef from the Loire-Atlantique region of France. Currently, he is a bakery consultant/instructor based in Seoul, South Korea.

The Chef discovered the profession a little before his 18th birthday, in a country bakery near his home and began his career in Nantes.
He then joined the Institut National de Boulangerie-Pâtisserie, a reference institute located in Rouen, where he completed his master's degree.

Discovering a passion for teaching, the Chef decided to devote the rest of his professional journey to teaching.
He immediately joined the teaching team of the INBP and stayed there for 3 years. He then participated in the creation of the Bakery Training Department of the famous Ecole Hôtelière de Lausanne, alongside his friend Thomas Marie.

Driven by the desire to live out new adventures and to extend the teaching of French bakery across the borders, Jean-Marie Lanio moved to Seoul in 2015 to launch a series of master classes for the INBP, before opening his own training school.
Twice a finalist in the Meilleur Ouvrier de France competition, Jean-Marie Lanio hosts training courses all over the world, to professionals and individuals alike.

The Chef is the co-author of two reference books in France and in the world: the Grand livre de la boulangerie and the Grand livre de la viennoiserie (the latter with Olivier Magne, notably), as well as books in Korean: Quel délice ces croissants, Quel délice ces baguettes, Quel délice ces brioches.

The Kouign-aman, flavored breads and exceptional viennoiseries are some of his signature pastries.
